Presentation of the enterprise
The French biscuit workshop, Aux Biscuits d'Antoine, is to be found in the small Burgundian village which is the owner's home. Antoine Lequesne trained as a pastry-maker.
A member of Bio-Bourgogne, checked by an independent organisation : criteria which meet the consumer's demand for the serious skills of an craftsman.
Organic ingredients were chosen in virtue of a personal ethic in favour of environmental protection, humanitarian concern for working conditions, and the desire to promote health.
Buckwheat specialities because buckwheat contains many vitamins and is particularly easy to digest. Hulled buckwheat is used to achieve a finished product which is practically identical to products made whith wheat-flour, and which is much less pronounced in taste than wholemeal buckwheat flour.
As far as the use of palm oil is concerned, it is now almost the only solid vegetable oil which contains no peanut oil and which, in addition, is guaranteed by our supplier as being kosher.
In order to avoid all cross contamination, our laboratory workshop uses only organic products. The buckwheat is delivered hulled, but is then ground on-site with a millstone, so as to avoid all cross contamination and ensure traceability.
As a result of an urgent demand from our customers, a range of organic biscuits originally conceived on classical organic lines has been transformed into a hypoallergenic range.
A technical and regulatory will be set up :

- Product and manufacturing processes in line with requirements
- Development of the range
Our business is a craft business. Because of their texture, fragility and presentation, the manufacture and storage of our products must be largely conducted by hand.
The superiority of craft production makes it possible to keep a strict watch over the manufacturing quality, the safety of the products and to ensure responsiveness to cutomer requirements. We are alwways open to new suggestions.
Manufacturing procedures and recipes are specifically designed to harmonise pleasure with dietary requirements. Antoine loves to make available new products of his imagination, and is always on the look out for new flavours. He gives great importance to taste, making use of refined and original recipes.
Sweet or savoury, our biscuits vary from the classic lemon-flavoured shortbread to an original '' vegetable '' biscuit.
